Peanut Butter Cookies

I love to bake, and I'm always looking for new recipes. I rarely make the same cookies more than twice, even if they're delicious, because I just enjoy trying new things.

You always see these decked-out recipes that are all modernized and such, but the simplest and best recipes are the ones that have been around a while. Sometimes the most successful recipes I've tried come from my moms's old Better Homes and Gardens cookbook (copyright 1981), like this one. I made these today in bite-size, medium size, and then a few with chocolate chips in them (mmmm). They're pretty easy and don't require any crazy ingredients, so give them a try if you like to bake easy stuff!

Peanut Butter Cookies

1 1/4 cups all-purpose flou
3/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter or margarine
1/2 cup peanut butter
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 egg
1/2 teaspoon vanilla

Oven 375°

Stir together flour, soda, and salt. In a mixer bowl beat butter for 30 seconds. Add peanut butter and sugars; beat till fluffy. Add egg and vanilla; beat well. Add dry ingredients to beaten mixture; beat till well combined. Shape dough into 1-inch balls; roll in granulated sugar, if desired. Place 2 inches apart on an ungreased cookie sheet; crisscross with the lines of a fork. Bake in a 375° oven about 10 minutes. Cool about 1 minute before removing to a wire rack.

Also: They're pretty good dipped in melted chocolate, if too plain by themselves for your liking.

Shannon! I have at least a hundred cookie recipes if not more. Literally. If you ever need a new recipe just ask :)

Haha ok, thanks. I've collected quite a bunch myself, I just have to try them all. About half of them are just plain chocolate chip because I'm looking for my favorite recipe. Do you have one?
